Toto Bello, a story of gluttony and friendship between two Toulousains
It is a Toulouse pizzeria, where you can taste pizzas made only with fresh and all homemade products. As Cédric Lemaître and Thomas Reveillaud are perfectionists, before embarking on the creation of their Toto Bello pizzeria in Toulouse (they already have an establishment in Tignes in the Alps), they set themselves a challenge: to participate in the World Championship of Pizza. They won this competition which takes place in Parma (twice!) by placing themselves among the 40 best pizzas in the world (25th and 39th). There's nothing like it to gain confidence and give free rein to the desire to set up a new restaurant together, in their hometown. Based on the same concept as their first restaurant, Cédric and Thomas make contact with local producers for certain fresh products, to guarantee a local source, such as for the charcuterie which comes straight from the Gracia house, the cheeses which are ordered at the Betty Cheese Factory. But for essential products such as Mozarella, Straciattela burrata from Puglia, San Marzano tomato for a sauce like in Italy , creamy, coating and tasty, they do not hesitate to supply themselves directly in Italy.

The best pizzas in Toulouse?!
Come and taste it to form your own opinion. The Toto Bello restaurant is located at 23 Bd Jean Brunhes, between the Zénith and the Patte d'Oie. It is a quiet, pleasant area where there is always room to park. Push the door for a one-way trip to Italy, because here all the products are selected and sometimes imported from "the boot " with care.
The interior room (with about twenty seats) is dressed in a clear, sober but friendly decoration, perfect to suit the delicious colors of the pizzas: they are enough in themselves as works of art! On sunny days, sit on the terrace (40 seats available), on the wooden gratings surrounded by vegetation, we are on vacation and the subtle smell of pizzas cooking tickles your sense of smell and awakens your gluttony.
In the kitchen and at the counter, the pizzaiolo works his dough. But it doesn't date from yesterday, rather from the day before yesterday because the dough is risen for 3 days, it is slowly preparing in the workshop, the manufacturing laboratory, with love and attention . The dough is special, it is made by a baker and the recipe (secret...yes, yes...), elaborated for a long time over a year, is patented! This long waiting period has no other purpose than to increase its digestibility. In fact, the gluten contained in the dough relaxes with the yeasts and the successive “rising” periods, an excellent secret to guarantee Toto Bello customers, to be able to finish their pizza without having a bloated stomach! Once it is delicately shaped into a perfectly round disk (but how do they do it??), the pizza is generously garnishedwith homemade sauce, cooked from the best ingredients, simmered for a long time. It is then covered with ingredients according to the pizza chosen by the gourmet customer who will then wait 1.30 minutes for his pizza to cook slowly in the artisanal oven, it will still crackle on the plate. Listen carefully, she talks to you and tells you her story to whet your appetite! Even the kids eat the edges of their bunny-shaped pizza (yes, I promise), so tasty are they down to the last crumb.
The oven used to cook Toto Bello's pizzas is not a classic oven... Handmade in Naples, it is assembled in Rome, then its 3 tons of mass are delivered to France. It is covered with a magnificent marble mosaic and inside it is a refractory stone which ensures even cooking of the pizzas. It is a gas oven, but which produces a real flame and is regulated by a very sophisticated electronic box. The pizzas cook at 350 degrees and 100 kilos of dough per day pass through this jewel of technology and tradition combined.
Do you know the difference between a Neapolitan and Romanpizza? Toto Bello's Roman pizza, pizza romana scrocchiarella has a very thin and crispy (crumbly) dough, with the addition of olive oil in the dough recipe, which will cook slowly in the pizza oven. Unlike the Neapolitan which will be quickly seared in a hotter oven to make it soft thanks to its greater thickness. Both are good, but different, there is something for everyone.

An extra ingredient on your pizza? Good humor , professionalism and relaxed atmosphere, it's a gift. On the other hand, remember to also consult the dessert menu, the lemon tiramisu, or classic, the homemade hot chocolate pizzas on a bed of bananas and roasted hazelnuts will not leave you unmoved, save a place for their melting, soft and smooth at the same time. On the wine side, the menu is attractive, you need good bottles for such good pizzas, and choice for everyone! Spritz lovers will be delighted to taste their favorite cocktail at aperitif time!
Cédric and Thomas invite their customers to taste original pizzas. If of course we find the classics on the menu, they are keen to push them to a little exoticism (promised, no pineapple pizzas!) to awaken the taste buds of the curious... pizzas have been prepared by a starred chef and each pairing with cheeses, vegetables, charcuterie is carefully considered, tested and tasted, for a festival of flavors in the mouth. Toto Bello also offers a "pizza of the month", which will particularly appeal to the establishment's many loyal customers.
