The establishment pays homage to French literature, by naming each of the ten rooms after famous writers. Thus, for a comfortable stay , we will gladly stay on the first floor, in “the women's district”, as the owners call it. We will hesitate between the George Sand and the Colette , the two prestige suites of approximately 40 m², with bathroom (shower and bath) and separate WC , equipped with air conditioning , wide-angle TV , coffee maker , and with a large private terrace overlooking the property's garden . Separated from one floor, no doubt to avoid couple quarrels, Arthur Rimbaud and Paul Verlaine welcome us comfortably in their traditional rooms of around twenty square meters, equipped, like all the others, with a flat screen TV , safe , heating , fan and hairdryer .

Run by Yannick and Laurent , the dear spouses of our two hotel owners Agnès and Nathalie, this inn lives up to its name… Nineteen o'clock sharp, we couldn't wait any longer, we shyly open the door, and here we are in the middle of the old barn of the castle with exposed stones and beams . We raise our heads to let ourselves be impressed by the immense chandelier suspended from the wooden frame . Very quickly, our flair was caught by the sweet aroma of roasted meat . A glance to the right and my eyes widen in front of this roast suckling pig , according to the ancestral method . I understand without delay that the huge cauldron simmering above the hearth , contains the precious garbure , a cabbage and meat soup, a traditional dish of Gascony cuisine , which precedes all the menus of the house .

At this moment, a question crosses my mind: are we still in the 21st century? It is the waiters , drawn to the nails, who bring me back to reason soon, working to offer us a neat and attentive service, worthy of a star .
It begins, as I said, with a generous tureen placed directly on the table. Here, no fuss, we use the ladle, and the good franquette !

The rest will be made only of fine and quality products , from the Ariège region and cooked with know-how , among which, some stars of the menu : beef matured in the cellars of the Château de Beauregard , a homemade foie gras to make melt, or a smoked salmon by them . And if meat is not your thing, the chefs will be happy to cook up a delicious vegetarian menu upon prior request.
